Ceviche with Alexcy

This is our first cooking vlog, and we're excited to be joined by our guest chef, Alexcy, to make ceviche.

For my 21st birthday, I traveled to Peru to hike Machu Picchu. It was there that I first tried ceviche, a dish that opened up a whole new world of flavors for me. I didn’t grow up in a family that explored much with food, but thankfully for my own sake (and the sake of my taste buds) I’ve always been eager to try new things. During my time in Peru, I tried everything from ceviche to cow heart to Inca Kola. Peruvian cuisine left a lasting impression on me, especially ceviche, with its vibrant flavors that truly capture the essence of Latin culture.

You can imagine my excitement when I discovered that my friend and neighbor at the time, Alexcy, was an avid cook who often had an extra plate for me. One of his regular dishes was ceviche, which instantly brought back the nostalgia of my 21st birthday in Peru. We’d enjoy it with rice or chips while watching whatever game was on. When I moved, my mom kept would joke around saying how much I’d miss his cooking, and she wasn’t wrong!

Luckily, we still live just 10 minutes apart, and I occasionally visit Alexcy, always hoping there’s a fresh plate of ceviche waiting for me.

ENJOY!

Ingredients:

1.5 lb of shrimp, peeled and diced

1/2 cup of fresh lime juice (about 4-5 limes)

1/2 cup of fresh lemon juice (about 2-3 lemons)

1/2 red onion finely chopped

2 habaneros seeded and minced

1-3 carrots chopped

1/4 cup of fresh cilantro chopped

Salt and pepper to taste

Tortilla chips or rice for serving
